Yard Sale Pizza (Clapton)

Yard Sale started in 2014 when co-founder Nick Buckland began making pizza in his own garden in Hackney, and opened its first shop — in a former kebab shop on Lower Clapton Road — that May, confirmed on the company's own site today. What makes it worth a record on its own terms is a genuine, named departure from Neapolitan orthodoxy: co-founder Johnnie Tate told Restaurant Online the trio deliberately uses gas ovens over wood-fired ones for a more consistent cook suited to delivery, and 'specially engineered' dough with stronger flour to survive the trip. That is a London-specific answer to a London-specific problem (delivery), not an imported technique, and it is the clearest evidence found in this run that the city's pizza culture is doing something of its own rather than only reproducing Naples.

Why it is here

What to order

The Harlamb Shake (harissa lamb, guindilla chillies, goats' cheese, red onion and mint yoghurt) or a collaboration pizza — Yard Sale runs regular 'love-in' collaborations with other London food businesses.

What we looked at

Oven: gas, chosen deliberately over wood-fired for delivery consistency — a named, evidenced departure from Neapolitan orthodoxy (Restaurant Online, 2018),dough: 'specially engineered', stronger flour, described as a secret recipe, made at each shop (Restaurant Online, 2018),distinctive identity: 18-inch pizzas, playful/punning menu, frequent collaborations with other independent London food businesses, transparency: co-founders speak on the record about the reasoning behind the oven choice, which most pizzerias do not volunteer
